Barbera d'Asti DOCG

A brief cold maceration (24 hours at 8-10°C) is followed by skin-contactfermentation for 8 days, with frequent pumping over. The must is then warmed to 35°Cand then left to macerate for another 24 hours. The alcoholic fermentation takes place in temperature-controlled stainless steel tanks followed by malolactic in barrique. The 12-month aging takes places 100% in 350-lt barriques. The wine is then bottle aged for 12 months.
